I don't know what tire youre running but I usually run washougal sticky's on my bike and the 90 feels more planted and stabel compared to the 80. I run the 90/100-21. In the sand is probably the biggest difference to me, it seems like it wont push as much when coming into a corner and feels more on "rails". You could use a tube suited for 100/90/19 but it would have to expand more to fit into the 120 so your risk of puncture goes up. Your call.
